Recruited after defeating a certain number of them. Just like dwellings, only allowing to cross rivers.

And before you can cross, you have to defeat the trolls.
But once you have defeated the trolls, you can recruit them and use the bridge freely?

Finally...
A bridge could be flagged and act as a lvl5+ dwelling.
Also, the mapmaker could customize the guards.
Maybe a bridge could have other functions, like: Observation Tower, Shipyard?

I think it should be neutral.
And Shipyards and Obs. Towers could maybe be different structures.
And for the bridge, the option to pay the trolls gold for passage. You don't have to fight them, but you have to pay gold Every time you want over.

when you defeat the guardians, you get the gold gathered on the bridge and the trolls come back to guard the bridge after, say, 1 week.

because...
I want it to hurt you if you don't have what it takes to beat the trolls.
Paying them of a few times and then beating them and getting the money back would be too easy.
Add to that the fact that you could count how many enemy scouts have passed before you.
You could however have a chance of finding a small amount of resources after beating the trolls. And the trolls could be like the Trees of Knowledge, demand either 2k gold or 10gems (or something else, set by mapmaker).
